Salmon Skewers with Herb Sauce

Ingredients
- 2 cloves garlic
- 1 bunch parsley
- juice of 1 lemon
- 3 tbsp wormwood
- 3 tbsp olive oil
- 400 g Salmon fillet
- 1 sorrel leaf
- 1 chervil sprig
- 1 dandelion leaf
- 1 wild garlic clove
- 1 rocket leaf
- 1 pimpinella leaf
- 50 g Pine nuts
- Salt
- Pepper (freshly ground)

Peel the garlic and press one clove through a press. Wash the parsley, shake dry, and finely chop the leaves. Mix 1 tbsp of parsley with the pressed garlic, lemon juice, wormwood, 1 tbsp olive oil, and pepper.

Wash the salmon fillet, pat dry with kitchen paper, and cut into 3 cm cubes. Thread the salmon pieces onto skewers, brush with the marinade, cover, and marinate in the refrigerator for about 1 hour. Wash the remaining herbs, shake dry, and chop them.

Blend the herbs, remaining garlic, parsley, olive oil, and pine nuts into a fine paste. Place the salmon skewers on a greased aluminum tray and grill under the broiler at 200°C for about 10-15 minutes. Season the skewers with salt and serve with the wild herb pesto.
