Salmon with Pea Sauce and Lettuce

Ingredients
- 8 small salmon fillets (50 g each)
- 1 tbsp fennel seeds
- 1 tbsp coriander seeds
- 2 tbsp clarified butter
- 1 tbsp oil
- 1 head of lettuce
- 150 g peas
- 200 ml whipping cream
- 4 cooked potatoes
- 1 tbsp butter
- a handful of purslane
- Salt
- Pepper

Sauté the peas in oil for 5 minutes, set aside 4 tbsp, wash the lettuce, halve the head and quarter each half. Set aside inner parts with stems, add remaining pieces to peas, pour cream over, bring to a boil, finely puree, add remaining peas, set aside.

Lightly salt the salmon fillets and slowly fry them in hot clarified butter with fennel and coriander seeds over medium heat. After about 3-4 minutes flip and finish cooking. In another pan fry the potatoes, add remaining lettuce pieces and sauté briefly.

Warm the sauce gently, season with salt and pepper, distribute onto four preheated plates, arrange salmon fillets on top, add lettuce and potatoes, serve hot.
