Ingredients
- 4 tbsp olive oil
- 2 lobster tails (with shell, fresh or frozen)
- 2 tbsp finely chopped parsley
- 250 g crushed tomatoes
- 80 ml dry white wine
- 1 tbsp vinegar
- 2 Bay leaves
- Salt
- ground pepper
- Salad leaves

Thaw the frozen lobsters.

Heat the oil in a pan and brown the lobster tails with shells for a few minutes until they turn pink. Add crushed tomatoes, wine, vinegar, bay leaves, salt, and pepper to the lobster tails and simmer covered on low heat for about 25 minutes. Remove, split lengthwise, and arrange on salad leaves.
