Salmon Patties
The salmon patties of Spoonsparrow are the perfect after-work dish for stressful days.
Ingredients
- 1 onion
- 1 Garlic clove
- a handful of dill (5 g)
- 500 g salmon fillet
- 2 Eggs
- Salt
- Pepper
- 125 g spelt whole-grain flour
- 1.5 tbsp sumac
- 3 tbsp olive oil
- 2 mini cucumbers
- 200 g yogurt (3.5% fat)
Instructions

Peel and finely dice the onion and garlic. Wash, dry, and trim the dill; set aside half of the leaves and finely chop the rest.

Pat the salmon fillet dry, then cut into ~1 cm cubes. Whisk the eggs in a bowl. Combine salmon, onion, garlic, and chopped dill, seasoning with salt and pepper.

In another bowl mix the flour with 1 tbsp sumac. Add the salmon mixture and stir until well combined.

Heat 2 tbsp oil in a large pan over medium heat. Drop spoonfuls of the batter (1–2 tbsp each) and flatten slightly. Cook patties for 6–8 minutes, turning once, until golden brown. Keep warm at 80 °C if needed.

Meanwhile slice cucumbers lengthwise into thin rounds. Season yogurt with salt, pepper, and remaining oil; whisk smooth. Plate salmon patties, arrange cucumber slices beside them, top everything with the yogurt sauce, sprinkle remaining sumac, garnish with dill tips, and serve with lemon wedges if desired.
