Salmon Mousse

Ingredients

  • 250 g smoked salmon
  • 2 untreated lemons
  • 1 sheet gelatin
  • 100 g whipping cream
  • 2 tbsp yogurt
  • Salt
  • Pepper
  • 1 bunch dill
  • a few chives rings
  • 8 slices toast bread
  • 1 tbsp caviar
  • 100 g lamb's lettuce

Instructions

    Finely chop the salmon and blend with grated lemon zest and a splash of lemon juice. Soak gelatin in cold water. Whip the cream until stiff peaks form. Melt the gelatin gently in a small saucepan, stir in a little cream, then fold into the remaining whipped cream. Mix the cream, yogurt, and salmon together, season with salt and pepper. Wash and finely chop dill, add to the mixture, and refrigerate.

    Cut star shapes from the toast slices and toast them in 1 tbsp oil in a pan. Fill a piping bag with the mousse and decorate the bread stars. Garnish with dill, chives rings, and caviar. Thoroughly wash lamb's lettuce, dry it by shaking, whisk together leftover oil, 2 tbsp lemon juice, salt, and pepper to make a dressing, drizzle over the salad, and arrange on plates with the salmon stars.
