Onion Salad

Ingredients
- 400 g silver onions
- 3 tbsp nut oil
- 2 tbsp sugar
- 5 tbsp Marsala wine
- Salt
- Cayenne pepper
- 1 pinch Cardamom
- 2 yellow tomatoes
- 100 g field lettuce
- 2 tbsp Red wine vinegar
- 2 tsp Olive oil
Instructions

Pour silver onions into boiling water, immediately drain and shock with cold water. Peel the onions.

Heat nut oil in a pot. Add sugar, stir until it melts and turns light brown. Add the silver onions and let them caramelize briefly. Pour in Marsala wine, cover, and cook over medium heat; then simmer uncovered until the liquid reduces, stirring occasionally to prevent burning. Season with salt, cayenne pepper, and cardamom. Let cool.

Rinse tomatoes and slice into very thin rounds. Clean, wash, and dry the field lettuce. Whisk vinegar with olive oil and toss the lettuce in it. Arrange tomatoes, lettuce, and onions on a plate. Sprinkle with coarse ground pepper if desired.
