Ingredients

  • 600 g firm potatoes
  • olive oil (for greasing the dish)
  • 100 g Spinach
  • Salt
  • 2 Garlic cloves
  • 2 red onions
  • 1 tbsp Olive Oil
  • 100 ml dry white wine
  • 250 ml vegetable broth
  • 200 g cream cheese (with yogurt)
  • 2 Tbsp grated Parmesan
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • a splash of lemon juice
  • 600 g salmon fillet
  • Lemon slices (for garnish)

Instructions

    Wash the potatoes and steam them for about 20 minutes until just tender. Peel, let cool slightly, then quarter or cut into pieces depending on size.

    Preheat the oven to 180°C fan. Lightly oil a baking dish with a little olive oil.

    Wash and trim the spinach, blanch briefly in salted water, shock in cold water, drain and roughly chop. Peel the garlic and onions; finely mince the garlic and slice the onions into rings. Sauté both in hot oil for 1–2 minutes until translucent. Deglaze with wine, reduce slightly, then add broth. Remove from heat, stir in cream cheese and Parmesan. Season with salt, pepper, nutmeg, and lemon juice.

    Rinse the salmon, pat dry, and cut into bite‑sized cubes. Layer the potatoes in the prepared dish, top with salmon, pour over the sauce, and bake for about 25 minutes until golden brown. Add a little more broth if needed and serve garnished with lemon slices.
