Salmon with Zucchini Patties

Ingredients
- 450 g zucchini
- 2 Eggs
- 3 tbsp Flour
- 1 tsp freshly chopped thyme
- Salt
- Pepper (freshly ground)
- 4 tbsp plant oil
- 600 g salmon fillet (ready-to-cook, skinless)
- Lemon juice
- 30 g Butter
- 8 sprigs lemon thyme

Wash, trim and halve the zucchini lengthwise, remove seeds and grate finely. Mix with eggs, flour and chopped thyme, season with salt and pepper; if mixture is too wet add a little more flour.

Heat 2 tbsp oil in a pan and use a tablespoon to drop small heaps into the pan. Press them slightly flat and fry until golden brown on both sides.

Preheat oven to 180°C (356°F) with upper and lower heat, keep the cooked patties warm.

Wash salmon, pat dry, season with salt and pepper, drizzle with lemon juice, then sear in a hot pan with remaining oil over medium heat for about 2 minutes per side. Add butter, spread thyme on top, reduce heat, cover and let the fish steam for 5-6 minutes until translucent.

Arrange the patties with salmon on warmed plates and serve.
