Lamb Chops with Fruity Raspberry Sauce

Ingredients

  • 2 parsley sprigs
  • 2 mint sprigs
  • 350 g Raspberries
  • 2 tbsp lemon juice
  • 1 tbsp raspberry vinegar
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 rosemary sprig
  • 8 lamb chops (trimmed)

Instructions

    Rinse the parsley and mint, shake dry and finely chop. If needed, rinse the raspberries and place them in a blender. Add lemon juice, raspberry vinegar, peeled garlic and blend until smooth. Stir in the chopped herbs and 2 tbsp oil, then season the sauce with salt and pepper to taste.

    Preheat the grill. Rinse rosemary, shake dry and pluck needles from one sprig. Finely chop and stir into the remaining oil. Rinse the chops, pat dry and brush with the rosemary oil. Grill each side for 3-5 minutes depending on desired doneness, placing the leftover rosemary over the meat during cooking. Finally season with salt and pepper and serve with the raspberry sauce.
