Salmon Fillet Wrapped in Foil with Vegetables

Fresh salmon fillets wrapped in foil with spinach, tomatoes, shallots, garlic and basil – a wholesome dish from the leafy greens category. Try this and other recipes from Spoonsparrow!

Ingredients

  • 4 salmon fillets (about 250 g each)
  • 120 g young spinach
  • 4 tomatoes
  • 1 Shallot
  • 2 cloves garlic
  • 2 sprigs Basil
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • Sea salt
  • ground pepper

Instructions

    Preheat the oven to 200°C fan.

    Rinse and pat dry the salmon. Rinse, discard stems and spin dry the spinach. Lay four large sheets of foil on a baking tray as a bed for the salmon and place the fillets on top.

    Peel the tomatoes, blanch, cool, peel, quarter, seed and do not dice. Peel and finely cube the shallot. Peel the garlic and slice thinly. Rinse basil, shake dry, pluck leaves and cut into strips. Mix the tomatoes with garlic, shallots, olive oil, lemon juice, salt and pepper and spread over the salmon. Fold and seal the foil packets well. Bake on a rack in the oven for about 20 minutes.
