Ingredients

  • 1 small eggplant
  • 1 larger onion
  • 50 g mushrooms
  • 4 tbsp soy sauce
  • 300 g lean pork (sliced)
  • 3 tbsp oil
  • Salt
  • ground pepper

Instructions

    Wash, trim, and cut the eggplant lengthwise into thin strips.

    Peel the onion and slice it into rings.

    Clean the mushrooms and slice them.

  4. 4.

    Brown the pork in 2 tbsp hot oil in a wok for 3–4 minutes while stirring, then remove.

    Add the remaining oil to the wok, sauté the onion for 2 minutes, add mushrooms and eggplant, and stir-fry vigorously for about 3 minutes. Return the pork, season with salt and pepper, stir in soy sauce, taste, plate, and serve.
