Salmon with Salsa

Ingredients
- 1 untreated lemon
- 1 tsp peppercorns
- 1 tsp coriander seeds
- 4 salmon fillets (about 120 g each)
- 200 g Cherry tomatoes
- 1 handful coriander leaves
- 2 red chili peppers
- 1 splash lime juice
- Salt
- Pepper
- 1 Avocado
- 300 g mostly waxy potatoes
- Salt

- 2 tbsp sunflower oil

Lay out all ingredients. Wash the lemon hot and cut it in half.

Bring about 400 ml water to a boil with peppercorns and coriander seeds. Reduce heat. Rinse the salmon, place it in the broth and poach for 10-15 minutes (at ~80°C).

Meanwhile wash and halve the tomatoes. Rinse the coriander leaves, shake dry and chop. Wash the chili peppers and slice into rings.

Peel the avocado, cut in half, remove the pit and dice.

Combine tomatoes, chili and coriander in a bowl and season with lime juice, salt and pepper.

For the rösti peel, wash and grate the potatoes finely. Wrap in a kitchen towel, squeeze out excess liquid and catch the potato juice. Let sit briefly then drain water. Mix the settled starch with the grated potatoes and season with salt, pepper and nutmeg.

Place four heaps of the mixture into a large non‑stick pan with hot oil, flatten them. Fry 3-4 minutes slowly until golden brown, flip and fry another 3-4 minutes.

Arrange rösti on plates, spoon salsa over them, place the drained salmon on top, lightly season with salt and pepper and serve.
