Salmon Fillet with Vegetable Topping

Ingredients

  • 4 pieces salmon fillet (about 180 g each)
  • 1 onion
  • 1 stalk leek
  • 2 bell peppers (green and red)
  • Salt
  • 4 tbsp olive oil
  • Salt
  • pepper (coarsely ground)
  • Lemon juice
  • fresh herbs for garnish (e.g., lemon balm, basil, parsley)

Instructions

    Preheat the oven to 180°C fan.

    Wash and pat dry the salmon. Peel, halve, and slice the onion into thin strips. Clean the leek and cut into 5-6 cm long strips. Wash, halve, clean, and slice the bell peppers into very thin strips. Blanch all vegetables briefly in salted water, shock in ice water, then pat dry. Season the salmon with salt and pepper and sear both skin and flesh sides for a short time in 2 tbsp hot oil. Remove from pan and place skin side down on an oiled baking sheet. Mix the vegetables with the remaining oil and season with lemon juice and salt. Spread over the salmon fillets and bake for 12-15 minutes. Serve garnished with fresh herbs.
