Salmon Stuffed with Spinach
Spicy and packed with healthy nutrients, the salmon stuffed with spinach from Spoonsparrow!
Ingredients
- 250 g frozen spinach
- 2 salmon fillets (300 g each)
- 0.5 untreated lemon
- Salt
- 0.5 handful mixed herbs (e.g., thyme, oregano, parsley)
- 1 Garlic clove
- 1 tbsp breadcrumbs
- Nutmeg (freshly grated)
- 1 Red Onion
- black pepper
- 2 tbsp olive oil

Thaw the spinach. Preheat the oven to 200°C with upper and lower heat.

Rinse the salmon, pat dry, and place skin side down on parchment paper. Slice two lemon wedges and set aside. Drizzle the salmon with a little lemon juice and season with salt.

Rinse the herbs and shake off excess moisture. Place the spinach in a bowl, mix in some herb leaves. Peel the garlic, slice into rounds, and add to the spinach with the breadcrumbs. Season with salt and nutmeg.

Peel the onion and cut into rings. Arrange these on a salmon fillet. Add the remaining herbs and season with pepper.

Spread the spinach over the onions.

Place the second side of the salmon, top with lemon wedges, and tie everything together with kitchen twine.

Brush the fish with olive oil, wrap in parchment paper, and seal. Bake the salmon stuffed with spinach for about 30 minutes.

Serve with, for example, boiled potatoes.
