Ingredients

  • 1 large onion
  • 1 large carrot
  • 1 Zucchini
  • 4 medium salmon steaks
  • 1 bunch fresh basil
  • 75 ml dry white wine
  • Salt
  • Pepper (freshly ground)
  • 5 ml lemon juice
  • 1 tbsp butter

Instructions

    Peel and dice the onion; wash, peel, and slice the carrot and zucchini into thin strips.

    Gently rinse the salmon steaks and pat them dry with a paper towel.

    Place the sliced vegetables in a large pot and lay the salmon steaks on top. Remove basil leaves from the stems, set half aside, and place the other half over the salmon. Season with salt and pepper, then pour in the wine and 100 ml water. Bring to a simmer over medium heat. Cover and let cook gently for about 10 minutes. Transfer the salmon to warmed plates. Cook the vegetables another 5 minutes.

    Add lemon juice and butter, then simmer for an additional minute. Use an immersion blender to puree the vegetables, seasoning with salt and pepper to taste. Finely chop the remaining basil and fold into the sauce. Warm the sauce briefly before pouring over the salmon steaks.

    Side dish: steamed carrot strips sautéed in butter and sugar snap peas.
