Salmon Fillet with Soy Sauce, Fruit and Feta

Ingredients
- 600 g salmon fillet (4 pieces)
- 1 tsp lemon juice
- 1 tbsp soy sauce
- 1 tbsp oil
- 70 g fresh spinach
- 200 g strawberries
- 250 g small blue grapes
- 200 g mature sheep cheese
- 1 onion
- 2 tbsp balsamic cream
- Salt
- Pepper
- 600 g small potatoes
- 2 tbsp oil
- Salt
- Pepper
Instructions

Wash and halve the potatoes. Brush a baking sheet with oil, season with salt and pepper. Place the potatoes cut side down on the sheet and bake in a preheated oven at 200°C for about 30 minutes.

Rinse the fish under cold water, pat dry, then brush with lemon juice and soy sauce; marinate for at least 5 minutes. Afterwards brush with oil and grill or sear in a grill pan until crisp.

Meanwhile wash and rinse the spinach, shake off excess water. Slice strawberries into rounds. Wash grapes, halve and pit them. Peel the onion and cut into half rings. Crumble the feta. Mix all salad ingredients together and marinate with balsamic cream.

Plate the fish on dishes and top with the salad. Serve immediately with the oven potatoes.
