Ingredients
- 2 salmon fillets (with skin about 200 g)
- 300 g kelp (seafood shop)
- juice of one lemon
- 1 tsp clarified butter
- Salt
- Pepper (freshly ground)
- 30 g pickled lemons (or chutney)
Instructions

Remove any bones from the salmon fillet, season with salt and pepper, and drizzle with a little lemon juice.

Wash the kelp and blanch in boiling salted water for about 10 minutes; remove, drain, and season with salt and lemon juice.

Sear the salmon fillets in hot clarified butter on both sides for about 2 minutes each side until golden.

Plate the salmon over a bed of kelp and serve with pickled lemons or chutney.
