Salmon with Lemon Sauce

Ingredients
- 4 salmon fillets (with skin, 150 g each)
- 1 untreated lemon (1 tbsp grated zest)
- juice of one lemon
- 3 tbsp lemon zest
- 3 tbsp chopped basil
- butter
- 250 ml heavy cream
- 3 shallots (peeled and finely chopped)
- Salt
- Pepper (freshly ground)
- freshly grated nutmeg
- oil (for frying)
- 400 g fresh gnocchi (from the refrigerated section)
Instructions

Wash salmon fillets, pat dry and season with salt and pepper.

Heat 1 tbsp butter in a pan and sauté shallots until translucent. Add grated lemon zest and cook briefly. Deglaze with lemon juice. Add cream and let sauce simmer gently to thicken. Season with salt, pepper, basil, and a pinch of nutmeg.

Heat 3 tbsp oil and fry salmon fillets skin-side down for 2-3 minutes over high heat, then flip and cook another minute.

Fry gnocchi in a little butter until golden brown, seasoning with salt and pepper.

Plate the salmon with lemon sauce and gnocchi. Garnish with lemon zest and basil leaves and serve immediately.
