Salmon, Camembert, and Pesto Pizza

- 500 g flour (Vienna Griessler)
- 40 g yeast
- 2 tsp salt
- 1 tsp sugar
- Olive oil (extra virgin)
- 4 tbsp passata
- Salt
- freshly ground pepper
- 4 tbsp basil pesto (from the fridge)
- 200 g smoked salmon
- 2 sprigs dill
- 6 slices camembert

Mix flour with salt, form a mound and create a well. Sprinkle yeast and sugar into the well. Add about 80 ml lukewarm water to fill and let stand for 20 minutes. Then knead with 2 tbsp oil and about 100 ml lukewarm water into a smooth dough; add more warm water if needed. Cover the dough and leave it in a warm, draft-free place for 1 hour.

Preheat oven to 250 °C fan. Knead the dough well and divide in half. On a floured surface shape two flatbreads. Spread passata on each, then spoon basil pesto over them. Cut salmon into pieces, finely chop, and distribute over the pesto; top with camembert slices and sprinkle chopped dill. Drizzle 1–2 tbsp olive oil over each and bake in the hot oven for about 20 minutes until golden.
