Ingredients
- 800 g mostly firm potatoes
- 2 egg yolks
- 150 g grated Bergkäse cheese
- 1 EL potato starch (depending on potato variety)
- 0.25 TL cumin seeds
- nutmeg
- vegetable oil (for frying)
- Salt
- ground pepper

Peel and grate the potatoes. Wrap them in a damp kitchen towel and squeeze out excess moisture. Let the potato juice sit for a moment, then drain so that the released starch remains at the bottom of the bowl. Mix the grated potatoes with egg yolks, cheese, and potato starch. Season with cumin and nutmeg.

Form portions of the mixture into small mounds and place them in a non-stick pan with hot oil. Press flat and fry 2-3 minutes until golden brown. Flip and cook another 2-3 minutes until fully browned. Drain on paper towels.
