Ingredients
- 300 ml Vegetable broth
- 400 ml orange juice
- 250 g red lentils
- plant fat (for frying)
- 300 g smoked tofu
- 150 g mixed salad (e.g., lamb's lettuce, Batavia)
- 3 tbsp white balsamic vinegar
- 4 tbsp olive oil
- 1 pinch sugar
- Salt
- Pepper (freshly ground)
- 2 Apples (Granny Smith)
- 1 handful alfalfa sprouts
Instructions

Bring the broth and orange juice to a boil. Cover the lentils and simmer on low heat for about 8 minutes, stirring occasionally. Drain and let cool.

Heat the frying fat, slice the tofu thinly, and fry in hot fat until crisp. Wash and dry the salad. Mix the lentils with vinegar and olive oil, season with sugar, salt, and pepper. Wash the apples, halve, core, and slice thinly. Arrange the salad on plates as a bed, top with lentils, apples, and tofu, then sprinkle sprouts over.
