A fresh lentil-pear salad with arugula featuring bright flavors and a light kefir dressing from Spoonsparrow!

Ingredients

  • 100 g yellow lentils
  • 250 g arugula
  • 1 Red Onion
  • 1 pear
  • 100 ml kefir
  • 2 tbsp olive oil
  • Salt
  • Cayenne pepper

Instructions

    Simmer the lentils in vegetable broth for about 10 minutes, then drain and let cool.

    Clean and rinse the arugula, removing any tough stems if necessary.

    Peel the onion and slice into rings. Quarter the pear, remove the core, and cut into wedges. Toss these ingredients gently together and arrange on plates.
