Salad with Pineberries

Ingredients
- 300 g leafy greens (Radicchio, Swiss chard and arugula)
- 300 g strawberries (pineberries)
- 1 handful beet sprouts
- 1 handful shiso watercress (red and green)
- 200 g smoked duck breast fillet
- 150 g sliced beets (jar)
- 2 tbsp lemon juice
- 1 tsp Honey
- 4 Tbsp sunflower oil
- Salt
- Pepper
Instructions

Wash, trim, dry and cut the greens into bite-sized pieces. Wash, trim and halve the pineberries. Rinse and drain the sprouts and watercress. Slice the duck breast. Drain the beets and reserve 2-3 tbsp of juice.

Whisk beet juice with lemon juice, honey and oil; season with salt and pepper.

Arrange all prepared salad ingredients in a bowl or on plates and drizzle with the dressing before serving.
