Salad with Pineberries

Ingredients

  • 300 g leafy greens (Radicchio, Swiss chard and arugula)
  • 300 g strawberries (pineberries)
  • 1 handful beet sprouts
  • 1 handful shiso watercress (red and green)
  • 200 g smoked duck breast fillet
  • 150 g sliced beets (jar)
  • 2 tbsp lemon juice
  • 1 tsp Honey
  • 4 Tbsp sunflower oil
  • Salt
  • Pepper

Instructions

    Wash, trim, dry and cut the greens into bite-sized pieces. Wash, trim and halve the pineberries. Rinse and drain the sprouts and watercress. Slice the duck breast. Drain the beets and reserve 2-3 tbsp of juice.

    Whisk beet juice with lemon juice, honey and oil; season with salt and pepper.

    Arrange all prepared salad ingredients in a bowl or on plates and drizzle with the dressing before serving.
