Sage Polenta Cubes

Ingredients

  • 700 ml vegetable broth
  • 250 g polenta (cornmeal)
  • 40 g Parmesan cheese
  • olive oil (for the baking sheet)
  • 4 tbsp butter
  • 8 sage leaves
  • coarse Sea salt

Instructions

    Bring the vegetable broth to a boil with olive oil and slowly stir in the polenta and grated parmesan. Remove from heat and let it rest for about 20 minutes until it has absorbed the liquid. Then spread it into a 2.5 cm thick layer on a small greased baking sheet and allow it to cool.

    Cut the cooled polenta into cubes or diamonds. Melt butter in a pan, add sage leaves, and fry the polenta cubes from each side until golden brown. Sprinkle with coarse sea salt and serve in small bowls.
