Ingredients

  • 100 g beef fillet (to taste)
  • Pepper
  • 1 sesame oil
  • 200 g prepared sushi rice
  • 1 carrot (ca. 50 g)
  • 1 daikon radish (ca. 50 g)
  • 8 large iceberg lettuce leaves
  • 0.25 Lemon
  • 0.5 bunch Chives
  • 2 tsp Sesame seeds
  • 1 tsp wasabi paste

Instructions

    Peel the carrot and daikon, then cut into thin sticks about 6 cm long.

    Season the beef fillet with pepper and quickly sear in very hot oil; remove immediately from the pan and let cool. Slice into ultra-thin strips.

    Blanch the carrot and daikon sticks in boiling salted water for about 3 minutes, drain, shock in ice water, and dry.

    Lay two lettuce leaves on top of each other to form an approximate triangle, spread a little wasabi paste on each. With damp hands shape four cones from the sushi rice. Slice the lemon into thin rounds.

    Layer the lettuce with rice, beef strips, and vegetable sticks. Sprinkle the beef with sesame seeds, place chives on top, and roll into small parcels. Secure the outer lettuce edge of each parcel with three rice grains. Garnish with a lemon slice and serve on small plates.
