- 1 head of lettuce
- 400 g fresh peas
- 40 g roasted cashew nuts
- 2 peaches
- 4 tbsp sesame oil
- 2 tbsp raspberry vinegar
- 3 tbsp apple cider vinegar
- Salt
- Pepper
- 1 tsp Honey

Wash, trim and tear the salad into bite‑sized pieces. Separate half of the peas from their pods; leave the rest whole if desired. Arrange the lettuce, peas and nuts on a plate.

Wash the peaches and cut them into wedges. Grill over high heat, turning occasionally, for about 7 minutes until lightly charred. Whisk together the oil, both vinegars, salt, pepper and honey to make a vinaigrette; drizzle over the salad. Top with the grilled peach wedges and serve immediately.
