Ingredients

  • 1 romaine lettuce
  • 4 slices of toast bread
  • 1 tbsp mayonnaise
  • 2 tsp coarse mustard
  • 3 tbsp white wine vinegar
  • 6 tbsp vegetable oil
  • 2 anchovy fillets
  • 3 Garlic cloves
  • Salt
  • black pepper (freshly ground)
  • 3 tbsp vegetable oil (for frying)

Instructions

    Separate the leaves from the lettuce, wash, trim, dry and cut into bite‑sized pieces. Cut the bread into cubes. In a bowl whisk together mayonnaise, mustard, vinegar and the first tablespoon of oil to make the dressing.

    Drain the anchovy fillets and fold them in. Peel one garlic clove, press it into the dressing, mix well, and season with salt and pepper. Slice the remaining garlic thinly and sauté in a hot pan with oil until translucent. Remove the garlic from the pan and sprinkle over the salad as desired.

    Add the bread cubes to the hot garlic oil, fry until golden brown all around, then drain on paper towels. Season with salt. Toss the lettuce with the bread cubes and dressing in a bowl and serve immediately.
