Ingredients

  • 200 g arugula (with flowers for garnish)
  • 2 yellow bell peppers
  • 1 Red Onion
  • 2 tbsp white wine vinegar
  • 1 tbsp Lemon Juice
  • a pinch of sugar
  • 2 tbsp chopped walnut kernels
  • 1 tbsp freshly chopped parsley
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp Walnut oil

Instructions

    Wash and dry the arugula, remove any tough stems if needed, and tear into bite-sized pieces. Wash the bell peppers, halve them, remove seeds and white membranes, and cut across into thin strips. Peel, halve, and slice the onion into strips.

    Whisk together vinegar, lemon juice, sugar, salt, pepper, and oil; combine with remaining salad ingredients. Taste and adjust seasoning, then serve in a bowl garnished with arugula flowers.
