Sage Chicken
The sage chicken from Spoonsparrow will surely please everyone!
Ingredients
- 1.2 kg chicken parts (breast and drumsticks)
- 2 lemons (juice)
- 2 fresh chili peppers
- 15 sage leaves
- 100 ml olive oil
- Salt
- pepper (ground)

Wash the chili peppers and cut them lengthwise in half. Remove stems and white membranes. Finely chop the chilies. Wash, pat dry, and finely slice the sage leaves.

Combine lemon juice, chopped chilies, sage, and olive oil in a bowl and stir well. Season generously with pepper. Coat the chicken pieces with the herb-chili Marinade and marinate covered in the refrigerator for about 1½ hours, turning once during the process.

Season the marinated chicken all around and spread it on the oven tray along with half of the remaining Marinade.

Bake in a preheated oven at 200°C (fan 180°C) on the second rack from below for about 45 minutes until crispy. Baste the chicken with the Marinade midway through baking. Remove the sage chicken, place it on a warmed plate, and pour the leftover Marinade over it. Optionally garnish with additional sage leaves and lemon slices.
