Ingredients

  • 250 g couscous
  • 3 tomatoes
  • 1 large red onion
  • 2 Garlic cloves
  • 80 g Sheep Cheese
  • 0.5 bunch mint
  • 3 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 0.5 tsp ground coriander
  • Salt
  • Pepper
  • 15 g chopped pistachios (1 tbsp)
  • 15 g peanut kernels (1 tbsp)

Instructions

    Prepare couscous according to package instructions.

    Meanwhile wash, peel and dice the tomatoes. Peel the onion, cut it lengthwise into strips. Peel the garlic and finely chop it. Dice the sheep cheese into small cubes.

    Fluff the couscous with a fork. Wash the mint, shake off excess water and chop the leaves.

  4. 4.

    Whisk together vinegar, oil, coriander, salt, and pepper. Add tomatoes, garlic, and onion, then mix with the couscous.

    Add sheep cheese, mint, pistachios, and peanuts; fold gently and season again with salt and pepper.
