Ingredients

  • 1 cup long‑grain rice
  • 1 tsp saffron
  • 4 dried apricots
  • 4 candied ginger pieces
  • 4 tbsp raisins
  • 4 tbsp plum wine
  • Salt
  • Pepper
  • 4 tbsp vegetable broth
  • 1 tbsp soy sauce

Instructions

    Wash the rice in a sieve under running water, then bring to a boil with slightly salted water and saffron, covering and simmering on low heat for about 20 minutes. Meanwhile slice the apricots and ginger into sticks, rinse the raisins well, and marinate everything in plum wine.

    Add the fruit to the cooked rice, stir in the broth, season the rice with soy sauce, salt, and pepper, and let it rest warm. Serve the saffron rice in bowls.
