Vegan Pan-Fried Potatoes

My Spoonsparrow recipe for vegan pan-fried potatoes not only satisfies veggie lovers.
Ingredients
- 800 g small waxy potatoes (cooked)
- 2 tbsp plant oil
- 2 red onions
- 200 g Cherry tomatoes
- 1 sprig thyme
- Salt
- Pepper
Instructions

Peel the potatoes and cut them into wedges. In a hot pan with oil, cook slowly for about 15 minutes until golden brown. Meanwhile peel and slice the onions. Wash and halve the tomatoes.

After about 5 minutes add the onions and after 10 minutes add the tomatoes to the potatoes. Rinse the thyme, shake dry, pluck the leaves, mix in, season with salt and pepper, and serve.
