Saffron Pasta

- 300 g flour
- 0.2 g ground saffron
- 3 eggs
- 2 tbsp oil
- Salt

Combine all dough ingredients in a bowl and knead well. If the dough is too dry, add a little cold water. Cover and let rest for about 30 minutes. Roll the dough thinly on a floured surface, dust with flour, fold into a rectangle (15x20 cm). Lightly flatten again and pass through the thickest setting of the pasta machine.

Dust with flour again, fold, and pass through a thinner setting. Repeat until the dough has gone through the smallest setting. Cut the dough into sheets (15x20 cm) and run each sheet through a spaghetti nozzle. Dust the finished noodles with flour, form small nests, and store in an airtight container.
