Rustic Wheat Bread

Ingredients
- 0.5 cube fresh yeast (ca. 21 g)
- 75 g sourdough starter (ready-made from the bakery section)
- 2 tbsp Maple syrup
- 250 g rye flour (Type 1150)
- 250 g wheat flour (Type 550)
- 2 tsp salt
- flour (for working)

Crush the yeast and dissolve it in 350 ml lukewarm water. Add the sourdough starter and syrup, stir well. Mix both flours with the salt and knead into a smooth dough with the sourdough mixture. Let rise covered in a floured bowl for about 1.5 hours.

Divide the dough on a floured surface and shape into two loaves. Place on a floured baking sheet, score with a sharp knife (e.g., a floral pattern), dust with flour, cover with a kitchen towel, and proof again for 1 hour.

Preheat the oven to 250 °C fan or 250 °C conventional. Slide the loaves into the preheated oven, reduce the temperature to 200 °C, and bake for 30 minutes until golden brown.
