Ingredients

  • 1 green bell pepper
  • 1 red bell pepper
  • 3 tomatoes
  • 2 shallots
  • 1 Garlic clove
  • Salt
  • Pepper (freshly ground)
  • 160 g canned artichoke hearts
  • 4 thick slices of round country bread
  • 8 black olives
  • 2 balls of mozzarella (125 g each)

    Wash, trim, and slice the bell peppers into thin rings. Remove stems from tomatoes and blanch for about 30 seconds in boiling water. Cool under cold running water and peel off skins; dice the flesh. Peel and mince the shallots and garlic. Combine diced tomatoes with shallots and garlic, seasoning with salt and pepper.

    Preheat oven to 210°C (425°F) on top heat or grill setting. Drain artichokes in a sieve then halve them. Arrange bread slices side‑by‑side on an oven rack and spread tomato mixture over each. Top with bell pepper rings, artichoke hearts, and olives. Drain mozzarella and slice. Place mozzarella on the prepared breads and bake for 6–8 minutes until golden and bubbly.
