Ingredients

  • 3 bunches arugula (approx. 300 g)
  • 2 tbsp balsamic vinegar
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 10 tomatoes (dried, pickled in oil)
  • 2 tbsp capers
  • 2 slices white bread
  • 1 clove garlic

Instructions

    Clean the arugula, remove leaves and cut off hard stems, wash and pat dry.

    Slice the tomatoes into strips.

  3. 3.

    Toast the bread cubes in 1–2 tbsp of the pickling oil until crisp, then press the garlic on top.

    Whisk together vinegar, salt, pepper, and olive oil; toss with the arugula, add tomato strips, capers, and croutons.
