Arugula Apple Salad with Walnuts

Ingredients

  • 180 g arugula (about 150 - 2 bundles)
  • 40 g coarsely chopped walnut kernels
  • 60 g pecorino cheese (whole piece)
  • 2 tart apples
  • 1 lemon (freshly squeezed juice)
  • 2 tbsp white wine vinegar
  • 0.25 tsp mustard
  • 1 pinch sugar
  • Salt
  • pepper (ground)
  • 3 tbsp germination oil
  • 1 tbsp walnut oil

Instructions

    Wash, trim, and dry arugula; remove any tough stems if needed. Quarter apples, peel, core, and slice thinly; immediately drizzle with lemon juice.

    Whisk vinegar with mustard, sugar, salt, and pepper, then gradually whisk in the oils until emulsified; taste and adjust seasoning.

    Toss arugula and apple slices with the dressing and spread on plates;

    Sprinkle walnuts over the salad and shave pecorino cheese onto the top using a paring knife or truffle grater.
