Asian Glass Noodle Ground Beef Salad

Ingredients

  • 150 g glass noodles
  • 100 g pre-cooked shrimps
  • 200 g mixed ground beef
  • 3 tbsp Sesame oil
  • 1 tbsp fish sauce
  • 2 tbsp Soy sauce
  • 1 bunch scallions
  • 2 red chilies
  • 1 bunch cilantro leaves
  • 1 pinch sugar
  • 2 limes (juice only)
  • Salt
  • ground pepper
  • 1 cucumber
  • Chinakohl leaves or pale savoy cabbage leaves

Instructions

    Pour boiling water over the glass noodles in a bowl and let them soak until softened.

    Wash, trim, and slice scallions diagonally into rings. Slice chilies into rings or small cubes. Rinse cilantro and shake dry; set aside some leaves, finely chop the rest. Brown the ground beef in 2 tbsp hot oil until crumbly, then add scallions and chilies for 2-3 minutes, seasoning with fish sauce and soy sauce.

    Drain the noodles in a colander and cut them into smaller pieces with kitchen scissors.

    Sauté shrimps in the remaining oil for 2-3 minutes, remove and set aside. Mix lime juice and sugar; combine with the beef mixture, noodles, and shrimps, then fold in chopped cilantro. Let the salad marinate for about an hour.

    For serving, slice cucumber into rounds. Place 1-2 cabbage leaves on a plate, arrange cucumber slices decoratively, top with the glass noodle salad, and garnish with extra cilantro leaves.
