Ingredients
- 50 g Pine nuts
- 2 bunches arugula (~30 g)
- 3 Garlic cloves
- 40 g grated Parmesan
- 100 ml olive oil
- 1 tsp lemon juice
- Salt
- pepper (from grinder)
Instructions

Roast the pine nuts in a dry pan until golden brown. Remove and set aside. Rinse, wash, and dry the arugula.

Peel the garlic and combine it with the arugula, roasted pine nuts, parmesan, and olive oil in a blender; blend to a fine paste.

Season with lemon juice, salt, and pepper; taste and adjust. Serve plated in a bowl or on a plate.
