Ingredients

  • 2 tbsp sunflower seeds
  • 125 g sun-dried tomatoes
  • 2 Garlic cloves
  • 40 g Parmesan
  • 1 tsp lemon zest (unprocessed)
  • 1 tsp tomato paste
  • 160 ml olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Roast the sunflower seeds in a dry pan until light brown and fragrant. Remove and let cool. Roughly chop the tomatoes. Peel the garlic cloves.

    Break the parmesan into pieces and add it with the zest, tomato paste, garlic, tomatoes, and sunflower seeds to the blender.

    Blend everything while slowly adding the olive oil. Continue blending until a fine cream forms. Season with salt and pepper. Transfer to two hot, rinsed jars, cover with a little oil, and seal tightly.
