Rösti with Swede, Herb Quark and Smoked Salmon

Ingredients
- 250 g cream cheese (at least 40% fat)
- Salt
- black pepper (freshly ground)
- 2 tbsp lemon juice
- 1 tbsp argan oil
- 2 tbsp chives rolls
- 500 g waxy potatoes
- 500 g swede
- 1 young fresh garlic bulb
- 1 egg
- Salt

- a pinch nutmeg
- clarified butter (for frying)
- 200 g smoked salmon (sliced)
- fresh marjoram (for garnish)
Instructions

Mix the quark with salt, pepper, lemon juice, argan oil and chives rolls. Cover and refrigerate until serving.

Wash the potatoes and boil them in salted water for about 25 minutes, then cool, peel and let them rest. Peel the swede, cut it into evenly sized pieces and cook in a little salted water until tender. Grate the potatoes coarsely on a grater. Drain the swede pieces, mash them finely with a potato masher and add to the potatoes. Separate the garlic cloves, peel and finely chop them, then mix into the potatoes; beat in the egg and season the mixture with salt, pepper and nutmeg.

Heat clarified butter in a non‑stick pan. Drop spoonfuls of the potato mixture into the pan, flatten and smooth each patty. Fry the rösti on both sides until golden brown, remove and keep warm until all are cooked.

Stack several rösti for serving, top with chives quark, smoked salmon slices and fresh marjoram. Serve hot.
