Pumpkin-parsnip patties with green salad from Spoonsparrow are always well received.

Ingredients

  • 500 g parsnips
  • 2 cm ginger
  • 500 g pumpkin flesh e.g., Hokkaido (seeded and peeled)
  • 2 Eggs
  • 1 Tbsp starch
  • 60 g freshly grated hard cheese e.g., Parmesan or Pecorino
  • 0.5 tsp Curry Powder
  • Salt
  • Nutmeg (freshly grated)
  • pepper (ground fresh)
  • clarified butter for frying

Instructions

    Peel the parsnips and ginger and grate them finely along with the pumpkin. Mix well with the eggs, starch, cheese, and curry, then season with salt, nutmeg, and pepper.

    Heat clarified butter in a hot pan and fry portions of the mixture into small patties. Drop spoonfuls of the batter into the fat and cook each side 3-4 minutes until golden brown.

    Drain on kitchen paper and serve with a colorful salad as desired.
