Potato Parsnip Patties

These potato and parsnip patties from Spoonsparrow are always a hit.
Ingredients
- 400 g Potatoes
- 500 g parsnips
- 30 g potato starch
- 1 egg
- 100 g flour
- Salt
- pepper (ground)
- nutmeg
- 2 sprigs parsley
- 3 tbsp Rapeseed oil

Peel and grate the potatoes and parsnips. Squeeze out excess liquid from the grated potatoes, then mix them with the grated parsnips, starch, egg, and flour. Season with salt, pepper, and nutmeg. Wash, dry, and finely chop the parsley leaves, then fold into the potato mixture.

Heat oil in a pan. Drop spoonfuls of the batter into the hot oil, flattening each patty. Fry for about 3–5 minutes until golden brown, flip, and cook another 3–5 minutes. Remove and serve on a plate with kitchen paper.
