Potato Pancakes with Apple Compote

The classic potato pancakes with apple compote from Spoonsparrow taste great for the whole family.
Ingredients
- 1 kg starchy potatoes
- 3 eggs
- 5 tbsp wheat flour type 1050
- Salt
- Pepper (freshly ground)
- freshly grated nutmeg
- 3 tbsp Rapeseed oil
- 8 sour apples
- 1 tbsp powdered sugar

Wash, peel and grate the potatoes coarsely. Place in a clean kitchen towel, squeeze out excess liquid, let stand for a few minutes until starch settles, then mix the settled starch back with the grated potatoes. Add eggs and flour, season with salt, pepper and nutmeg.

Heat 3 tbsp oil in a pan and use a tablespoon to drop small mounds into the hot fat. Flatten slightly and fry on medium heat until golden brown on both sides. Add an extra tbsp oil if needed. Drain on kitchen paper. Serve immediately hot with cold apple compote.
