Ingredients
- 1 kg waxy potatoes
- 3 eggs
- 60 g flour
- Salt
- 4 tbsp Sour cream
- 8 slices cured salmon (or salmon)

Wash, peel, and grate the potatoes. Mix the eggs, flour, and a pinch of salt with the grated potato. Grease a waffle iron generously with oil and bake golden brown waffles from each tablespoon of potato batter.

Place one potato waffle on a plate, top with two slices of salmon and a tablespoon of crème fraîche, then cover with a second waffle.

Sprinkle with fresh basil to taste.
