Ingredients

  • 1 kg mostly waxy potatoes
  • Salt
  • Pepper (freshly ground)
  • clarified butter for frying
  • 150 g Gruyère cheese

Instructions

    Peel the potatoes and grate them coarsely. Season with salt and pepper. Add 1–2 tablespoons of clarified butter to a large, hot non-stick pan and pour in the grated potatoes. Spread evenly and press lightly. If needed, add more butter and cook over medium heat for 5–6 minutes until golden brown. Flip using a plate and cook the other side with a bit more butter for another 5–6 minutes until golden brown.
