Ingredients

  • 1 kg waxy potatoes
  • Salt
  • Pepper
  • 2 Eggs
  • 2 tbsp flour
  • 100 g mayonnaise
  • 100 g cooked shrimp
  • 1 orange
  • 1 tomato
  • stinging nettle oil (for frying)
  • parsley (for garnish)

Instructions

    Wash, peel and grate the potatoes coarsely. Squeeze out excess moisture, then mix with egg and flour and season with salt and pepper. Heat plenty of oil in a wide pan and fry small patties in batches until golden. Drain briefly on paper towels, sprinkle with salt, and keep warm in a 70 °C convection oven.

    Peel the orange with a sharp knife, removing all white membranes. Then cut along the segments to separate orange slices.

    Wash the tomato, quarter it, remove seeds and dice into small cubes. Pat shrimp dry with paper towels.

    For serving, spread a dollop of mayonnaise on each patty, top with shrimp and orange slices, and garnish with tomato cubes and parsley.
