Ingredients
- 8 eggs
- 4 tbsp crème fraîche
- 1 tbsp heavy cream
- 0.5 tsp lemon juice
- Salt
- white pepper (freshly ground)
- 1 tsp finely chopped dill sprigs
- 200 g smoked salmon (sliced)
- 1 packet of watercress
- 4 tsp trout caviar
- 4 tsp black sea bream caviar
- dill sprigs (for garnish)
Instructions

Hard boil the eggs, cool in ice water, peel, cut lengthwise in half and let them chill.

Whisk the crème fraîche with the heavy cream and lemon juice until smooth, season with salt and pepper, then fold in the finely chopped dill sprigs.

Cut the salmon into small pieces. Harvest fresh watercress from the garden or use store‑bought.

Place a dollop of crème on each egg half and distribute the caviar over it. Garnish the eggs with dill sprigs. Arrange the salmon, watercress, and eggs on a platter for serving.
