Ingredients

  • 1 bunch Basil
  • 1 Organic lemon
  • 3 cloves garlic
  • 200 g cooked white beans (homemade or canned)
  • 2 tbsp olive oil
  • Salt
  • chili powder
  • 4 slices white bread
  • 2 tsp small capers

Instructions

    Wash and shake basil dry. Remove leaves and finely chop. Wash lemon halves hot, dry, grate zest and squeeze juice. Peel garlic and press through a grinder.

    Drain beans and blend with garlic, 2 tsp lemon juice and olive oil until smooth. Fold in basil and lemon zest; season cream with salt and a pinch of chili powder. Preheat oven to 220°C fan. Toast bread slices for 4-5 minutes. Spread cream on toasted bread and sprinkle capers before serving if desired.
