Rosenkohl Salad with Salmon

Ingredients

  • 800 g Brussels sprouts
  • Salt
  • 1 onion
  • 2 tbsp grape seed oil
  • 250 g smoked salmon (sliced)
  • 2 sprigs dill
  • 10 g horseradish (1 piece)
  • 1 tbsp Lemon Juice

Instructions

    Wash, trim and cross‑cut the stems of the Brussels sprouts. Boil them in salted water for about 10 minutes until tender. Drain, rinse with cold water and let drain well.

    Meanwhile peel the onion and slice it into rings.

    Heat oil in a pan. Sauté the Brussels sprouts over medium heat for 2 minutes. In a bowl combine them with the onion rings and salmon slices.

    Wash dill, shake off excess moisture and chop. Peel and grate horseradish. Mix both into the salad and drizzle with lemon juice.
